Optimization of gamma-aminobutyric acid production by Lactobacillus brevis PML1 in dairy sludge-based culture medium through response surface methodology

Summary: The study evaluated the production of GABA by Lactobacillus brevis PML1 in a medium containing dairy sludge and soybean meal. Results showed that under optimal conditions, the strain was able to produce 300 ppm GABA, with fermented extract exhibiting antimicrobial, antioxidant, and anti-cancer cell properties. The strain also showed no hemolytic or DNase activity, making it a potential candidate for biological production of GABA in various food and pharmaceutical formulations.
