The Impact of Formulation on the Content of Phenolic Compounds in Snacks Enriched with Dracocephalum moldavica L. Seeds: Introduction to Receiving a New Functional Food Product

Summary: The study found that fried snacks enriched with Moldavian dragonhead seeds had high polyphenol content and antioxidant properties. Positive correlations were observed between the addition of dragonhead seeds and the content of polyphenolic compounds and free phenolic acids.

Summary: The study demonstrates that the addition of Moldavian dragonhead defatted flour can improve the cooking quality and sensory acceptance of pasta. Particularly at a concentration of 10g/100g, it results in a pasta with high nutritional content and sensory acceptance.

Summary: Dracocephalum moldavica L. is an important component in the Iranian food basket. This study investigated the bioactive compounds and biological activities of different extracts from the aerial parts of D. moldavica. The results showed that the ethyl acetate and methanolic extracts had the highest phenolic and flavonoid concentrations, as well as the most potent antioxidant potential. Both extracts were found to contain mainly rosmarinic acid, caffeic acid, and 2-hydroxycinnamic acid, which may be responsible for their high antioxidant activity. No cytotoxic effects were observed in tested concentrations on various cell lines.
