Why people follow a gluten-free diet? An application of health behaviour models

Summary: The study explored factors influencing adherence to a gluten-free diet (GFD) for celiac and non-celiac individuals using the Integrative Model (IM) and Multi Theory Model (MTM). Results showed that attitudes towards GFD, self-efficacy, norms, knowledge, and health conditions are key factors affecting adherence. IM was found to be more effective in explaining adherence to GFD compared to MTM.

Summary: The study revealed unsatisfactory levels of knowledge about celiac disease among healthcare professionals and patients, with differences in understanding between different specialties and regions. Further awareness-raising and educational activities are necessary to enhance healthcare professionals' knowledge and reduce diagnostic delays in unrecognized patients. Patients should be better informed about the disease to improve compliance with gluten-free diet.
