Determination of production factors of dehydrated strawberries by using Taguchi method approach

Summary: Dehydrated fruit is important for extending shelf-life and value of fresh fruit, and the optimal combination for producing dehydrated strawberries was determined using the Taguchi method in this study. Results showed that the best drying temperature was 70 degrees C, with a concentration of 50 degrees Brix and a timing of 60 minutes during osmotic dehydration. Drying temperature was found to be the most significant factor affecting the quality of the dehydrated fruit, with dehydrated strawberries characterized by dried skin, softened flesh, darker color, sweet taste, low acidity, high vitamin C, and total phenol content.
