Extraction, physicochemical characterization, and morphological properties of chitin and chitosan from cuticles of edible insects

Summary: This study investigated the use of cuticles from edible insects as a source of chitin and chitosan, obtained biotechnologically through enzymatic deproteinization. The efficiency of obtaining chitin was found to be 85%, with a total yield of 31.9%. Characterization using various techniques demonstrated the differentiation between chitin and chitosan based on the degree of deacetylation.
