Functionality of Food Components and Emerging Technologies

The antioxidant potential of different fractions obtained from freeze-dried tomatoes was evaluated, showing a significant positive correlation between polyphenols content and antioxidant activity. The extraction process increased the radical scavenging activity of hydrophilic compounds in the tomato matrix, revealing potential benefits for antioxidant-rich extracts in cytotoxicity studies.
