Selective modification of wheat bran affects its impact on gluten-starch dough rheology, microstructure and bread volume

Yamina De Bondt et al.

Summary: The addition of wheat bran in bread can decrease the strain hardening of dough despite optimization of water absorption and mixing time. The properties of dough rheology and loaf volume are significantly affected by the type of wheat bran, water absorption, and mixing time. The results suggest that water redistribution and gas cell incorporation can affect dough rheology when wheat bran is included in the dough.

Upgrading of valuable food component contents and anti-nutritional factors depletion by solid-state fermentation: A way to valorize wheat bran for nutrition

Sonja Jakovetic Tanaskovic et al.

Summary: Wheat bran, a by-product of wheat flour production, is limited in its application due to various anti-nutritional factors. Fermentation with Bacillus sp. TMF-2 can significantly improve the nutritional quality of wheat bran, increasing soluble phenolic content and enhancing antioxidant capacity. This process also leads to the production of gluten-free wheat bran by degrading gluten with protease.

Effect of wheat bran steam explosion pretreatment on flavors of nonenzymatic browning products

Guozhong Zhao et al.

Summary: Steam explosion (SE) pretreatment of wheat bran is effective in hydrolyzing cellulose, improving enzymatic digestion and solvent accessibility, which benefits soy sauce production. Under 1.5 MPa pressure, significant reductions in cellulose, hemicellulose, and lignin content were observed, leading to an intense increase in flavor determined by electronic nose analysis and sensory evaluation.

Defatted Rice Bran as a Potential Raw Material to Improve the Nutritional and Functional Quality of Cakes

Gabriela da Rocha Lemos Mendes et al.

Summary: The use of defatted rice bran in cakes can increase fiber content and antioxidant capacity while reducing energy value. A formulation with 30% defatted rice bran showed high acceptance, with 35% of judges willing to consume the product at least once a week if available in the market.

Combination of Extrusion and Fermentation with Lactobacillus plantarum and L. uvarum Strains for Improving the Safety Characteristics of Wheat Bran

Elena Bartkiene et al.

Summary: The combination of extrusion and fermentation can change several aspects of wheat bran characteristics, affecting acidity, microbiological parameters, and biogenic amine content. The lowest total mycotoxin concentration was found in a sample extruded at 130 degrees C and fermented with L. uvarum. These treatments show potential as an innovative pre-treatment for wheat bran, enhancing safety characteristics and composition.

Summary: The study found that superfine grinding can improve the sensory quality of bran-enriched noodles, but may not necessarily improve all aspects. As the amount of bran added increases, the quality of the noodles decreases. Noodles with 20% bran addition had the best taste and texture.
