Summary: The study showed that high molecular weight chitosan and chitosan oligosaccharide have different mechanisms in improving lipid metabolism in rats fed with a high-fat diet. High molecular weight chitosan acted by promoting liver antioxidant enzyme activity and reducing lipid peroxidation, while chitosan oligosaccharide worked by reducing lipid absorption.
