Insights into formation, detection and removal of the beany flavor in soybean protein

Summary: Plant-based meat analogues (PBMA) show potential in solving the global meat supply and demand imbalance. However, the naturally occurring beany flavor in soybeans hinders their further development. Different methods, including biotechnological, physical, and chemical approaches, can be utilized to remove the beany flavor, with physical processing being relatively effective but heat treatment potentially causing negative impacts on soybean protein functionality. Enzymatic modification combined with novel non-thermal processing and optimized texturization process of soybean protein are significant in eliminating the beany flavor in PBMA.

Effect of fermentation with single and co-culture of lactic acid bacteria on okara: evaluation of bioactive compounds and volatile profiles

Summary: The study reported the integral use of okara in a solid state fermentation process with wild strains of lactic acid bacteria, showing an improvement in aroma and an increase in bioactive compounds. Co-culturing lactic acid bacteria strains appeared to be the most promising for the biovalorization of okara, offering the potential for its use in the development of functional ingredients.
