Summary: The study indicated that RS4 ripening stage is suitable for processing papaya fruits to obtain vacuum-fried chips. The optimal vacuum frying conditions at 25 kPa were: 120 degrees C and 13.1 min. Vacuum frying led to a decrease in carotenoid content but an increase in the extractability of lycopene.
