Summary: Vegetarians advocate for plant-based alternative milks over natural dairy milk for human nutrition and health, but scientific evidence shows that natural milk has more beneficial nutrients. The increase in plant-based milk consumption has negatively impacted the traditional dairy industry, but the unique nutritional value of natural milk cannot be replaced.

Effects of High Hydrostatic Pressure on Technical Functional Properties of Edible Insect Protein

Summary: The study demonstrated that high pressure processing can enhance the technical functional properties of proteins extracted from edible insects by improving essential amino acid index, protein solubility, pH, color values, and forming capacity. The results suggest that high pressure treatment at 200 MPa is particularly effective in improving the quality of edible insect proteins.

Effects of organic solvent on functional properties of defatted proteins extracted from Protaetia brevitarsis larvae

Summary: The study found that defatting with n-hexane resulted in the highest efficiency and best technical properties of the extracted proteins, while defatting with ethanol could achieve similar foam and emulsifying capacities. The surface hydrophobicity of proteins decreased with the use of organic solvents, and excessive fat content disrupted their functional properties.

Comparison of the in vitro protein digestibility of Protaetia brevitarsis larvae and beef loin before and after defatting

Summary: The protein digestibility of Protaetia brevitarsis larvae before and after defatting by hexane was compared to beef loin in an in vitro model. The larvae showed higher protein content and digestibility than beef, and defatting affected both larvae and beef but did not induce a notable effect in larvae.
