Targeted metabolomics of anthocyanin derivatives during prolonged wine aging: Evolution, color contribution and aging prediction

Xin-Ke Zhang et al.

Summary: This study investigated the anthocyanin derivatives and chromatic characteristics of 234 different-vintage red wines using targeted HPLC-MS/MS and CIELAB approach. The results showed that the evolution patterns of different anthocyanin derivative classes varied during wine aging. Aging tawny characteristics were related to pyranoanthocyanins, while red violet color was associated with monomeric anthocyanins and flavanol-related derivates.

Differences in Astringency Subqualities Evaluated by Consumers and Trained Assessors on Sangiovese Wine Using Check-All-That-Apply (CATA)

Alessandra Rinaldi et al.

Summary: The study found that high-priced wines are more likely to be perceived by consumers as having negative features, with mouthcoat being the most important attribute for consumers. Trained assessors provided valuable information on the mouthfeel characteristics of Sangiovese wines and the attributes driving consumer liking.
