Effects of different processing steps on the flavor and colloidal properties of cloudy apple juice

Summary: This study investigated the flavor changes and particle properties of three varieties of apple juice during processing. Results showed that industrial pulping and filtration produced juice with weaker flavor but released important flavor esters, while pectinase treatment improved juice uniformity and stability, as well as increased the content of nonanal. Many volatile compounds were lost after heat treatment.
