Summary: The study demonstrated the non-sterile fermentation of food waste to produce 2,3-butanediol using a newly isolated thermophilic and alkaliphilic bacteria, B. licheniformis YNP5-TSU, which resulted in comparable 2,3-BDO concentrations and yields to traditional sterile fermentations. This approach provides a robust and energy-efficient method to convert food waste into high-value chemicals.
