The specific biological characteristics of spoilage microorganisms in eggs

Summary: This study focuses on the specific biological characteristics of 24 spoilage bacteria isolated from eggs, analyzing their protease activities, alkalinity tolerance, egg white and lysozyme tolerance, and survival rates in egg whites. The results showed differences in protease activity, pH tolerance, and survival rates among different strains, providing theoretical guidance for extending eggs' shelf life by controlling spoilage microorganisms during storage.
