Modeling the Ethanol Tolerance of the Probiotic YeastSaccharomyces cerevisiaevar.boulardiiCNCM I-745 for its Possible Use in a Functional Beer

G. Yedid Ramirez-Cota et al.

Summary: This study evaluated the ethanol stress responses of Saccharomyces cerevisiae and the probiotic yeast S. boulardii CNCM I-745 at two temperatures, finding that S. boulardii grown at 28 degrees Celsius exhibited the best ethanol tolerance (6-8%), making it suitable for the production of functional craft beers.

Effect of Saccharomyces and non-Saccharomyces native yeasts on beer aroma compounds

M. N. Larroque et al.

Summary: The increase in microbreweries has led to exponential growth in craft beer production. Interest in non-traditional yeasts for unique fermentation aromas is rising. Through analysis of fermentation profiles and sensory evaluations, local Saccharomyces and non-Saccharomyces yeasts from diverse food sources show potential for enhancing fermented and aromatic characteristics.

Technological features of Saccharomyces cerevisiae var. boulardii for potential probiotic wheat beer development

Breno Pereira de Paula et al.

Summary: A comparative controlled study was conducted to evaluate the performance of Saccharomyces cerevisiae var. boulardii as brewer's yeast for potential probiotic beer production. Changes in malt concentration and temperature profile were made to improve the yeast metabolism, with survival in beer indicating potential probiotic properties. Further research is needed to fully understand the metabolism of Saccharomyces cerevisiae var. boulardii and optimize conditions for wort recipe and temperature profile.

Nuno Bourbon-Melo et al.

Summary: The study isolated 17 strains of non-Saccharomyces yeasts, with Hanseniaspora guilliermondii IST315 and H. opuntiae IST408 showing the highest acceptability in terms of aroma profiles, which can improve the organoleptic properties of beer. Their presence in mixed-culture fermentations with S. cerevisiae US-05 influenced the volatile composition of beer.
