Geographical-based variations in white truffle Tuber magnatum aroma is explained by quantitative differences in key volatile compounds

Summary: This study investigated the aroma, sensory profiles, maturity, and bacterial communities of T. magnatum from Italy, Croatia, Hungary, and Serbia. The results showed that while main odor active compounds were present in all truffles, their concentrations varied. The aroma of truffle extracts were discriminable by sites, with volatile profiles varying more within sites than across geographic area, suggesting that specificities of the aroma of T. magnatum truffles are more likely linked to individual properties than provenance.
