Summary: The wheat industry rejects grains with high levels of alpha-amylase to avoid poor endproduct quality, caused mainly by preharvest sprouting and late maturity alpha-amylase induced by cool temperature shocks. Variability in LMA induction response to temperature changes was observed in different wheat cultivars, indicating the need for visual inspection during the soft dough stage of grain development to identify LMA-sensitive spikes.
