Infrared Radiation Favorably Influences the Quality Characteristics of Key Lime Juice

Summary: Infrared radiation (IR) showed more favorable effects on black lime juice compared to conventional thermal heating (CTH) by maintaining the nutrition and health benefits of the juice. IR treatment resulted in higher phenol content in juice and a decrease in antioxidant activity, while impacting ascorbic acid content and microbial activity.
