Prediction of specialty coffee flavors based on near-infrared spectra using machine- and deep-learning methods

Summary: This study demonstrated the feasibility of predicting specialty coffee flavors using machine learning and deep learning methods on near-infrared spectra of ground coffee. The models developed with support vector machine and deep convolutional neural network achieved similar performance in predicting the seven flavor categories, with the proposed visualization method presenting the potential correlations among the highly weighted spectral region, predicted flavor categories, and corresponding chemical composition.
