Different effects of pectin and κ-carrageenan on the multiscale structures and in vitro digestibility of extruded rice starch

Hai He et al.

Summary: This study compared the effects of pectin and kappa-carrageenan on the multilevel structures and digestibility of extruded rice starch, with carrageenan being more effective at low content and pectin increasing double-helices and A + B-type crystal contents. The addition of either pectin or carrageenan altered multiscale structures, with carrageenan leading to the growth of molecular aggregates and single-helices, while pectin resulted in higher contents of double-helices and A + B-type crystals.

Protein-starch matrix plays a key role in enzymic digestion of high-amylose wheat noodle

Hai-Teng Li et al.

Summary: The study revealed that the increased protein content in native HAW flour and thermal stability of starch in HAW noodles lead to higher food integrity and consequently enhance the resistance against alpha-amylase digestion. Overall, the diversity of starch-protein interactions in wheat-based food products underlies the nutritional value of natural whole foods.

Rheological, thermal and in vitro digestibility properties on complex of plasma modified Tartary buckwheat starches with quercetin

Shanshan Gao et al.

Summary: The study investigated the rheological, thermal properties, and digestibility of plasma-modified Tartary buckwheat starch complexed with quercetin. The results showed that quercetin increased the consistency coefficient and decreased the flow behavior index of the complex. SEM and TGA analysis revealed a more compact and stable structure after quercetin complexation, while XRD and FT-IR results indicated a non-inclusive complex with higher crystallinity formed through hydrogen bonding between quercetin and starch. Additionally, the digestion rate of the complex decreased compared to untreated Tartary buckwheat starch, attributed to increased viscosity, enhanced crystallinity, and compactness of starch granules.

Effect of different types and concentrations of fat on the physico-chemical properties of soy protein isolate gel

Dian W. Ningtyas et al.

Summary: The presence of different types of fats affects the gelation behavior and texture properties of SPI gel, with anhydrous milk fat producing stronger and firmer gels and exhibiting lower friction coefficient. The incorporation of fats influences the firmness and gelling properties of SPI gel.

The molecular structure of starch from different Musa genotypes: Higher branching density of amylose chains seems to promote enzyme-resistant structures

Josephine Yee et al.

Summary: This study analyzed the starch from six Musa cultivars and found significant differences in starch structure among them, including differences in amylose ratio, amylose branching degree, and the average length of long amylose unit chains. The cultivar Manzano, in particular, showed a dramatically lower extension of in vitro starch digestion compared to other cultivars.

In vitro and in vivo digestibility from bionanocomposite edible films based on native pumpkin flour/plum flour

Tomy J. Gutierrez

Summary: The study showed that the concentration of pumpkin flour matrix and natural filler significantly affected the properties of edible films, potentially leading to the redefinition of resistant starch classification. The addition of natural nanofiller had varying plasticizing effects on edible films at different concentrations, without significantly impacting their digestibility.
