LF NMR spectroscopy analysis of water dynamics and texture of Gluten-Free bread with cricket powder during storage

Summary: This study revealed that replacing starch with cricket powder in gluten-free bread can improve the nutritional value and delay the process of bread staling. The addition of cricket powder stabilizes water transport and increases molecular dynamics of water, leading to macroscopic changes in the texture of the bread. The results suggest that cricket powder can be an effective ingredient in gluten-free bread formulations.

Summary: This study investigated the chemical and antioxidant properties, as well as the antimicrobial and antibiofilm behavior of Cinnamomum cassia essential oil. The results showed that CCEO exhibited strong antimicrobial and antibiofilm activity against tested microorganisms.
