Foams and air-water interfaces stabilised by mildly purified rapeseed proteins after defatting

Summary: Rapeseed protein isolate has promising functional properties, but intensive purification damages protein functionality. We studied the interfacial and foaming properties of mildly obtained rapeseed protein concentrate and its derived defatted form. Results suggest that non-protein components at higher concentrations interfere with the interactions between adsorbed proteins, impacting foam stability. Mild purification can result in sustainably produced protein concentrates with promising foaming properties.
