Antioxidant properties of the extracts of vine tea (Ampelopsis grossedentata) with the different color characteristics and inhibition of rapeseed and sunflower oil oxidation

Summary: This study investigated the antioxidant properties of vine tea extracts and their inhibitory effect on lipid oxidation, finding that the extracts effectively scavenged radicals and inhibited lipid oxidation, especially those from young leaf samples. Compared to BHT, vine tea extracts significantly inhibited the increase of POV and TBARS in sunflower and rapeseed oils, suggesting their potential as natural antioxidants for extending the shelf life of food products.
