Environmental impact of wine fermentation in steel and concrete tanks

Francisco Flor Montalvo et al.

Summary: This paper compares the cradle-to-grave life cycle assessment of the two most common types of containers for wine fermentation, i.e. stainless-steel tanks and concrete tanks. The study indicates that building the tanks - either out of concrete or stainless steel - has a significant impact on the environment, with the fermentation stage being the main contributor to environmental impact.

Characterization of the Oxygen Transmission Rate of New-Ancient Natural Materials for Wine Maturation Containers

Ignacio Nevares et al.

Summary: The wine industry is currently moving towards using old natural materials to manufacture tanks with good oxygen permeability, in order to improve wine quality. Experimental results show that earthenware has excessive oxygen permeability, while claystone and concrete can be suitable options for wine maturation.
