Summary: The prevalence of aflatoxins in Iranian wheat flours was determined using HPLC, with a significant number of samples testing positive. Despite the detection of AFB1, the levels did not exceed safety limits. Human health risk assessments were conducted, revealing potential cancer risks for both children and adults in the Alborz State.

The Concentration and Probabilistic Health Risk of Potentially Toxic Elements (PTEs) in Edible Mushrooms (Wild and Cultivated) Samples Collected from Different Cities of Iran

Summary: This study investigated the concentrations of PTEs in different types of mushrooms collected from the market in Iran, and established a health risk assessment using the MSC method. While the concentrations of As, Cd, Cr, Cu, Fe, Hg, Mn, Ni, Pb, and Zn exceeded the standard levels, only the ingestion of Hg in wild mushrooms posed a non-carcinogenic risk for children. Overall, the consumption of mushrooms did not raise significant health concerns related to non-carcinogenic risks from PTEs.
